What’s Cooking 4/19/16?

This week is going to be a use it up week for meals.  I noticed this morning that I have 6 dozen eggs in the refrigerator.  We need to eat some eggs y’all!  I made a batch of deviled eggs this weekend that we really enjoyed with our hamburgers and I think hamburgers has become our new favorite meal.  SO GOOD!

Clearly eggs need to also become our favorite meal.

Deviled eggs it shall be….

Several years back I got into grilled cheese sandwiches.  I experimented with all different types of cheeses and breads.  I think our favorite was a grilled gouda cheese with an awesome fig jam (that was given to us) spread on marble rye bread.  I think typing that just made me hungry!  Again, SO GOOD!

I’m going to start experimenting with deviled eggs (like I did with grilled cheese) instead of making the same recipe every time.  I saw one recipe that included caviar.  That is not in the budget, and honestly I’ve had caviar and wasn’t impressed really.  What would be fun is for y’all to share your favorite deviled egg recipes with me to try.

What’s Cooking 4/19/16?

  • Breakfast: Kashi autumn wheat cereal
  • Lunch: tuna salad with whole grain Wasa crackers, deviled eggs
  • Dinner: sausage and potato hash with either fried eggs or I’ll make it into a strata with a salad on the side.

Here is a pic of the eggs I boiled this weekend.  I heard on some cooking show that the tell tell sign of an over cooked egg is the green ring around the yolk.  No green on these eggs.

I love my chickens, they bless us with the most beautiful eggs every day.  Like the Z Man says, “the best eggs you’ll ever eat”

Here is a picture of my favorite crackers that I’m having with my lunch today.  They are plain and simple, three ingredients and only 40 calories, and good too.

Friday Frugal Five

Again, I want everyone to know that I am completely stealing Five Frugal Things from Katy over at The Non Consumer Advocate.  I love her blog and if you have time, pop over there and check it out.

Five Frugal Things:

  • On Monday (before the March Madness Grocery Budget Challenge) I price shopped at Wal-Mart for avocados.  I showed the cashier my receipt from Aldi and she rang my avocados up for 59¢ each instead of 99¢  (they price match).  I’ll be hanging on to that Aldi receipt.
  • Took advantage of the warm weather this week and hung 3 loads of laundry on the line.
  • I cleaned and organized my kitchen cabinets, ending up with a large box of things to go to Goodwill.  I’ll keep decluttering and hopefully get some things listed on Craigs List.
  • Returned my books on cd to the library on time and picked up more. (On time means no late fees which is frugal)
  • Started another batch of citrus (vinegar) cleaner with leftover orange peels.  See my post titled “Orange Chicken” for the details.  I organized the pantry, fridge and freezer preparing for the MMGBC (extra points for sharing what those initials stand for)
  • (OK 6 Frugal things) Bought a bottle of vodka yesterday because the ice cold Corona with lime has too many damn calories!!! (more on that next week) Vodka with seltzer and lime juice, only 90 calories, BAM!  What????  That IS NOT groceries!!!  I’ll start testing the frugality of the vodka tonight, stay tuned.

The March Madness Grocery Budget

Let the madness begin, but I’m not talking about basketball.   Some friends and I have decided for each of us to come up with a “personal challenge” for the month of March.  My challenge is to plan our meals (breakfast, lunch and dinner) from the current (as of today) pantry and freezer items we have on hand.  I have only allowed $20 a week to supplement with fresh dairy, veggies or bread.

That’s it! $20 bucks a week for food for the entire month of March.  I have already put this weeks $20 in my grocery envelope.  This challenge will not include purchases of medicines or medical supplies, gas or work related expenses, or the occasional bottle of corona with lime.  Food products only.  Right now my pantry, fridge and freezers are pretty well stocked, so honestly I think we’ll be just fine.

I do have a trip planned for March, and the challenge will not be in effect during that time.  But I do want to keep meal expense to a minimum.  I’ll let you know how that works out.

I’ll post the meals (hopefully with pics) and grocery purchases weekly for accountability.

The thing about a challenge of any kind is that it’s a reminder for you to stay focused on the end goal.   I feel pretty good knowing that we’ll be ok on $20 a week for groceries but having that challenge makes sure I’m not just mindlessly stopping at the store because I feel like having whatever for dinner, or because I haven’t planned ahead.

Grocery Shopping Pic

I’ve always wanted to do this.  I don’t know why, but for some reason other bloggers grocery pictures have always interested me.  I guess I’m just nosy like that.

We recently got a new Aldi store in town and this weekend I got a chance to shop there.  It’s definitely different, but that’s not a bad thing.   I had been hearing that their prices on fresh produce was good, so I wanted to check it out.  I spent $27.35 for

  • 2 bags of frozen edamame
  • pack of 4 zucchini
  • 2 jars of artichoke hearts in water
  • 2 large bags of carrots
  • bag of 6 small cucumbers
  • bag of navel oranges
  • bag of sweet peppers
  • 2 bags of sunflower seeds
  • bag of celery stalk
  • 3 avocado  (I love that the avocado is 59¢ each)
  • 1 container of mushrooms

I went to Kroger and spent $28.24 for

  • 2 boxes of gluten free waffles (we do not have a gluten allergy, we just like these waffles)
  • 1 jar of organic natural peanut butter
  • 1 large bag of frozen pineapple (that was $11.49, but I had a $2 coupon)
  • 2 containers of organic lettuce
  • 1 container of cherry tomatoes
  • 2 cans of olives (another coupon)

I always price shop Wal-Mart and Kroger, and the only store that isn’t in my line of daily travel is Aldi.  I don’t know if I’ll travel across town that often to save a few dollars, but if I’m in the area I’ll definitely take advantage of it and bring my bags.  Aldi doesn’t give you grocery bags by the way, which is fine because my trunk is full of reusable bags all the time.

I do like the accountability of this post in keeping the grocery budget in check.  I suppose all those other smart bloggers were on to something when they started posting pics of their groceries.
